It's summer! Of course, being in San Diego, we have to have Mexican food (specifically tacos) at least once a week. These fish tacos are especially spectacular because of their two special homemade additions: mango salsa and a tangy yogurt sauce!
I absolutely adore these fish tacos not only because they're easy, but they're healthy too! As usual, all of the ingredients are available at Trader Joe's. This recipe uses the frozen tilapia fillets from Trader Joe's, but they also carry breaded fish. This is particularly yummy with the tangy yogurt sauce.
Without further ado, the recipe!
Tips & Tricks
Add tomatoes to the salsa for added texture and taste
Roll the limes before slicing to get the most amount of juice
Throw the tortillas in the toaster for quick warming
Substitute sour cream with greek yogurt for a healthy alternative
Use Trader Joe's breaded fish sticks with the yogurt sauce for a healthy spin on fish & chips
Enjoy summer and have a taco!
