Prosciutto & Brie Sandwich

Updated: Nov 3, 2018

My favorite meal of ALL time (especially for celebrations and date nights) is brie with baguette. I love pairing jams, fruits, cheeses, and breads to create a charcuterie board worthy of the biggest celebrations. When my boyfriend, Trey, and I planned our picnic to the beach this weekend, I knew we had to include a similar pairing. It is difficult to transport all of these ingredients, so I knew I had to create a tasty sandwich for this outing.

The best and most crucial part of this sandwich is the homemade apricot jam. Our apricot tree was absolutely flourishing, so apricot jam made perfect sense. I will soon be releasing the recipe, and it is well worth trying! If you are unable to create your own, I highly recommend buying either apricot or fig jam.

All of the ingredients for this sandwich are, of course, available at Trader Joe's. I love buying my more expensive ingredients from Trader Joe's just because it becomes so much more economical. The french baguette was only $2! And the prosciutto & salami pack: $5! Love a good deal.

Without further ado, my gourmet prosciutto & brie sandwich:

  • 1 french baguette

  • 2 tbs apricot or fig jam

  • 1 package of prosciutto & salami

  • 2 cups of arugula

  • Half of package of brie cheese

1. Slice the baguette length wise, and cut to desired length

2. Spread the apricot jam along the bottom slice

3. Layer three pieces of salami on top of the apricot jam

4. Spread the brie cheese on the top slice of bread

5. Layer one strip of prosciutto over the bree

6. Stack a handful of arugula on top of the bottom layers

7. Flip the brie & prosciutto half over to create a sandwich

8. Cut a strip of parchment paper and wrap around the sandwich

9. Secure with twine.

Now the parchment paper may just sound like just a cute touch, but it serves a greater purpose. While on the picnic, it's crucial to pack everything as efficiently as possible. The sandwich has a hard time staying together because it is packed with so many yummy ingredients, so the twine and wax paper creates a little pocket for easy handling.

I packed two of these sandwiches side by side in tupperware and headed off to the beach! They were made three hours before eating, and were still perfectly in tact. I was also sure to lay the tupperware over a bed of ice to ensure freshness.

Now get stackin' and have yourself a yummy gourmet sandwich!

xoxo,

SKY
