Watermelon Cucumber Salad

If there's one thing that tastes like summer, it's WATERMELON! I love the perfect watermelon: sweet, juicy, and has that grainy texture. If you're on your way to impressing your friends at a family bbq or picnic, this side salad puts sliced watermelon to shame.

The special thing about this recipe, is the freedom you have to change it in any way you'd like! The original recipe calls for mint, but here, I use cilantro. You can also add more salt for the salted-watermelon flavor, arugula to make it a fuller salad, or basil to taste. The measurements are mere suggestions; flavor it the way you want!

Salad:

  • Half of a medium sized watermelon (cubed)

  • 2 cucumbers (chopped)

  • 1/4 cup cilantro

  • 1/2 cup light feta cheese

Dressing:

  • 2 tbs lime juice

  • 2 tbs honey

  • 1 tbs olive oil

  • Pinch of salt


And as salads tend to go... just mix it all together! This fresh summer salad will brighten up your plate, while adding textures and tastes you may have never had paired together. Add-ins, mix-ins, make it any way you want!
