When you've got a backyard filled with fruits and veggies, you have to get creative! I saw flourishing cilantro and a perfect zucchini...so...TOSTADAS! This recipe turned out to be a huge hit with my family. Fresh, healthy, and delicious. Oh. And all of the ingredients are from Trader Joe's (except of course the homegrown zucchini and cilantro).

How to Make It
Preheat the broiler. Combine the first 3 ingredients. Heat oil in a skillet over medium-high heat. Sprinkle the spice over the chicken. Add chicken to pan; sauté for 3 minutes. Add onion, corn, and zucchini to pan; sauté for 2 minutes or until chicken is done. Stir in salsa and 2 tbs cilantro. Cook 2 minutes or until liquid almost evaporates, stirring frequently.
Arrange tortillas on baking sheet and coat in cooking spray. Broil 2 minutes. Spoon 3/4 cup chicken mixture in center of each tortilla, and sprinkle with cheese. Broil an additional 2 minutes. Repeat procedure with each tortilla. Then sprinkle each serving with 3/4 tsp of cilantro.
And there you have it! A yummy dinner for four!
This tostada was certainly a success. I will absolutely be making this meal again, and hopefully with more homegrown zucchinis and cilantro. My sister even went so far as to say she'd purchase it at a restaurant! It was packed full of flavor. But what really made the difference? The salsa verde. This salsa is available at Trader Joe's and really completes the whole meal.
For a spin on this recipe, fill corn tortillas with the chicken and veggie mix for a small taco! Add bell peppers and it becomes fajita.
